Introducing my recent project, Modified Nikujaga. This project involves modifying the traditional Japanese home dish, Nikujaga, by incorporating molecular cuisine techniques to create a puree meal. I aimed to make this dish accessible to those who have difficulty swallowing or chewing, offering a new and innovative take on a classic recipe.
